Hi, I’m Katie.

My partner and I were drawn to Fort Collins by several friends, who’d recommended as a mini mountain paradise for years. During one visit in late May, I experienced the laid back, close-knit vibes as we pedaled our bikes from brewery to brewpub through the peaceful early summer evening. We fell in love with the mountain views and the exceptionally welcoming community with its farm stands, unique small businesses, and bookshops. When I’m not baking, you’ll find me ripping along the Lory valley trails on my gravel bike or traveling across the country (if I’m lucky, the globe!) to race bikes with my team, Velocio Exploro.

What is The Bonnie Beinn?

“Bonnie Beinn” means “beautiful mountain” in Scots Gaelic. The Bonnie Beinn Bakeshop (pronounced “bayne”) originates from Scots Gaelic for “beautiful mountain”.  It’s an ode to my Scottish heritage, and represents my values of courage, industry, community connection and staying curious.

I aim to bring what brings me joy- small batch baking, novelty and adventure, and enjoying the moment while connecting with others - to the northern Colorado area with these bakes.

My hope for the Bonnie Beinn is for these desserts to be the ones you dream about long after you finish eating them, and for you to be proud to share and gift them to people you care about.
