Espresso Choc Chip Shortbread Sammies
This one is in honor of my dad, who drinks ~8 cups of coffee every morning.
For all you other coffee lovers, these rich espresso cookies are sprinkled with semi-sweet chocolate and sandwiched on beautiful vanilla buttercream that balances the coffee bitterness perfectly. For added complexity and taste, I added a splash of local favorite Horse & Dragon Brewery’s Sad Panda Stout simple syrup.
