Espresso Choc Chip Shortbread Sammies
For all you the coffee lovers, these rich espresso cookies are sprinkled with semi-sweet chocolate and sandwiched on beautiful vanilla (or chocolate, your choice!) buttercream that balances the coffee bitterness perfectly. For added complexity and taste, I added a splash of local favorite Horse & Dragon Brewery’s Sad Panda Stout simple syrup.
